The Daedalus Class was only shown as a desktop model in Sisko's office during the run of DS9. The model there is based on one of Matt Jefferies concept sketches for the original Enterprise from TOS. So, until now it is debatable if this is the true appearance of that class or just a model that closely follows the lines of the original design. M. Christopher Freeman therefore came up with the design offered here, that kept the overall proportions but adapted the style seen on "Star Trek: Enterprise", fitting it into that era.
Well, i think this fits well as the original look of the Class ship, the USS Daedalus and maybe a handful of ships from the first production run. In the books continuing the story after the events of the last episode of "Enterprise", leading into the Earth-Romulan War it is said that the production was focused on this ship design. Although weaker than the NX-Class, they could build 3 Daedalus Class Vessels in the same time as one NX-Class. In my thinking, the design was then simplified for a rushed wartime production. Reducing it to the bare necessities and simple shapes, leading to the appearance as seen on the model in Sisko's office.
